How Does an Air Fryer Work?
An air fryer is a compact countertop convection appliance. An electric element heats the air, a fan moves that hot air rapidly around the food, and an open basket or tray exposes more of the food's surface to the moving air.

Air fryers do not deep-fry food. They cook with rapidly circulated hot air. The compact chamber and close, fast airflow can dry and brown a surface efficiently, especially when food is spread in a single layer with room around it.

Why food browns
Hot, relatively dry moving air removes moisture from the food's surface. Once the surface is dry and hot enough, browning reactions can develop flavor and color. A small amount of oil can improve contact and browning, but the food is not submerged as it would be in a deep fryer.
Wet batter behaves differently because there is no bath of oil to set it immediately. Breaded, dry-rubbed, frozen par-cooked, and lightly oiled foods are usually better suited to the airflow.
Why overcrowding changes the result
Food packed tightly together blocks the same airflow that makes the appliance effective. Steam becomes trapped, surfaces stay moist, and pieces can brown unevenly. The USDA advises avoiding overcrowding, and Philips likewise says not to cover the basket bottom completely.
For crisping, use a single layer when practical, leave gaps, and shake or turn food if the manual or recipe calls for it. Large batches may cook better in two rounds.
Air frying is still real cooking
Fast browning is not proof that meat or poultry is safe in the center. Use a food thermometer in the thickest part and follow the USDA minimum temperatures or the package directions for the food being cooked.
The appliance manual remains important for preheating, rack position, maximum fill, cookware, liners, and cleaning because the heater and airflow layout varies by model.
